Pour-over is the method that rewards attention. Nothing is hidden — no pressure, no crema, nowhere for a mistake to go. Done properly it is the clearest, sweetest cup you can make at home, and the reason it goes wrong is almost always that nobody weighed anything.

So the scale is in the box. It is not an accessory. It is the difference between a brew you can repeat and one you cannot.

Returns and guarantee

The guarantee covers faults, not accidents.

Anything we sell has to be free of defects when it reaches you, and we are answerable for that for two years. If a grinder's burrs fail, a scale stops reading, or something arrives cracked, that is ours. We cover the return postage and we repair, replace or refund.

It does not cover damage. A Chemex is borosilicate glass. It will break if it is dropped, knocked against a tap, or filled with boiling water straight from a cold sink. That is not a fault and it is not covered — though the collar, the tie and replacement glass are all things we can sell you.

Changed your mind? Send the set back within 14 days if the equipment is unused and the coffee bag is unopened, and we will refund it. If you have opened the coffee, return the rest and we will simply deduct the price of the bag.

Which is why it goes wrong for one reason above all others: nobody weighed anything. A scoop is not a measurement. A scoop of a light Ethiopian weighs noticeably less than a scoop of a dark Brazilian, so the same scoop gives you a different cup every time — and no way to tell which one was the good one.

So the scale is in the box. Sixty grams a litre, every time. Now the brew is yours to improve rather than yours to guess at.

How to brew it.

Dose 42g of coffee, ground for filter.

Water 700g, just off the boil.

Method Rinse the filter and pour that water away. Add the coffee and zero the scale. Pour 90g to wet the grounds and wait thirty seconds. Pour the rest in slow stages, keeping the bed level.

Time About four minutes. Much faster, grind finer. Much slower, grind coarser.

Frequently asked questions

Six cups is a lot. Is it too big for one person?

A cup here is 150ml, so six is about 900ml — a large pot. It brews happily at half capacity, and if you are usually making one or two, the 3-cup Chemex is the better glass.

We put the 6-cup in this set because it is the one that also works when there are people in the house.

Whole bean or ground for filter?

If you have a grinder, take it whole bean. Grinding fresh is the biggest single improvement available to you, and it costs nothing.

If you do not, choose filter and we will grind it to suit before it leaves us. A grinder is the upgrade to make next.

Do I need the special Chemex filters?

Yes, and they are the reason it tastes the way it does. Chemex paper is noticeably thicker than ordinary filter paper — it holds back the oils and the fines, and that is what gives the cup its clarity.

A hundred are in the box, which is most of a year for most people.

Can I return it?

Yes. Send it back within 14 days if the equipment is unused and the coffee bag is unopened.

If you have opened the coffee, return the rest and we will simply deduct the price of the bag. Anything faulty, we cover the return shipping and replace or refund it.

Can I collect it?

Yes. Choose collection at checkout and it will be waiting for you at any of our nine Dublin cafés the next business day. It is free and there is no minimum order.
