Our Montalvo Decaf is a directly sourced, single origin, washed coffee from Planadas in Colombia which has been naturally decaffeinated using the Sugarcane (E.A.) method. Expect notes of raisins, cinnamon and dark chocolate. It really is amazing!
Sugar Cane (E.A.) Processing - aka “The Natural Decaffeination Method” - is unique to Colombia where sugarcane is one of the main agricultural industries. The process begins with the fermenting of the molasses derived from sugar cane to create ethanol - a naturally occurring solvent (which is also found in alcoholic beverages). Ethanol is then mixed with acetic acid (found in vinegar) to create the compound ethyl acetate.
Green coffee is then steamed to open up its pores and soaked in a mixture of E.A. and water which dissolves the caffeine in the green seeds. Caffeine is then separated and filtered from the tank. Finally, the now-decaffeinated beans are steamed again to remove any residual E.A. before being dried and shipped.
