The coffee.
From Daye Bensa's Gatta Farm in Shantawene, Sidama (2,100+ masl). A sealed anaerobic fermentation before drying — wild fruit, winey sweetness. Bought direct; scores 85+ on the SCA scale.

Process: Anaerobic natural.

Why one bag.
No equipment — just your favourite mug. Nitrogen-sealed, so it's as fresh in month eleven as in week one. The bag composts; the sachet recycles.
Product Details
Notes of wine gums, strawberry jam and apple cider. Dried mango on the nose; high acidity, full body. An anaerobic natural from Sidama — big, juicy fruit, brewed clean.
- PLACE one bag in your mug.
- ADD water just off the boil (about 95°C) until the mug is 80% full.
- STEEP five minutes for the full cup — three if you like it lighter.
- REMOVE the bag with a gentle press against the mug. Done.
The inner bag and string are compostable PLA; the outer sachet recycles with soft plastics. The box is greyboard — paper recycling.
