El Pedregal sits on a mix of slopes and flat ground above 2000 metres in the municipality of Totoró, where cool nights and high‑elevation conditions slow cherry development and help build complexity in the cup. Shade‑grown coffee is interplanted with protected forest and temporary crops, and water is carefully managed through rainwater harvesting, solar‑powered pumps and gravity‑fed systems.
Producer Salomón Adriano Yunda is part of the Páez (Nasa) indigenous community and a member of COMEPCAFE, a cooperative of around 1400 families across seven zones of Cauca. COMEPCAFE supports members with agronomy training, food security programmes and pension schemes, while helping them access specialty markets for traceable, high‑quality lots. El Pedregal is a tiny, carefully managed expression of what Totoró's altitude, soils and farming intent can produce in the cup.
Process & quality.
At El Pedregal, ripe cherries are selectively harvested and taken to a small on‑farm beneficio for traditional washed processing. After pulping, the coffee is dry‑fermented for 24–30 hours – a precise window that allows the mucilage to break down fully without losing clarity or sweetness. The coffee is then thoroughly washed and moved to parabolic tents and high drying patios, where slow, controlled drying protects both stability and cup character.
Over more than a decade, Salomón has implemented a series of quality‑focused improvements guided by COMEPCAFE's technical team: upgrading fermentation tanks and washing systems, protecting soils, avoiding hazardous pesticides, and organising pest‑recognition tours to manage coffee borer proactively. The result is a clean, expressive washed coffee that reflects both its place and its producer in a very direct way.
