The coffee.

From Finca Los Angeles at the Las Lajas micromill in Costa Rica's Central Valley, grown between 1,400 and 1,600 masl. Oscar and Francisca Chacón have championed natural processing here for two decades, and the Double Diamond is their double anaerobic — fermented twice, sealed, before it ever sees the sun.

Notes of jelly tots, kiwi and molasses.

Varietal: San Isidro.

Process: Double Diamond (anaerobic natural).

Producer: Oscar & Francisca Chacón (Las Lajas).

Why one bag.

No equipment — just your favourite mug. Nitrogen-sealed, so it's as fresh in month eleven as in week one. The bag composts; the sachet recycles.

Proper coffee, brewed like tea.

A five-minute steep, wherever the kettle is.
