Origins & Producers.

Costa Rica – Ivan Solis Micromill, Finca Higueronal F1 (Anaerobic Natural):
Family-run micromill in Santa Maria de Dota, Costa Rica. High-altitude farms and careful anaerobic natural processing create a cup with vibrant fruit, brown sugar sweetness, and lively, wine-like acidity.

Brazil – Capim Branco, Arara Variety (Carbonic Maceration):
The Andrade family's Capim Branco estate in Cerrado Mineiro is known for innovation and quality. Using carbonic maceration with the Arara varietal develops a creamy body, bright citrus notes, and layers of yellow fruits and honey.

Processing Details.

Anaerobic Natural – Costa Rica:
Whole coffee cherries are fermented in closed tanks with very limited oxygen before being dried with the fruit still on the seed. This enhances fruit intensity, sweetness, and sparkling acidity.

Carbonic Maceration – Brazil:
Ripe Arara cherries are placed in sealed tanks filled with carbon dioxide. This controlled fermentation brings out pronounced fruit character, smooth texture, and a dessert-like sweetness that shines in a festive blend.
