Meet Delson. He has been growing coffee on his small farm, Serra da Picada, in the Poco Fundo region of Brazil for 21 years. Micro-lot #550 was grown and processed with the guidance of Dr. Flávio Borém, Brazil’s most famous coffee quality scientist, whose revolutionary and eco-aware work on new techniques has allowed Delson to produce a naturally processed coffee with truly beautiful and distinctive flavours.
Following hand picking, Delson’s coffee cherries were spread out in a single layer on a stone patio. After two days or drying another single layer was added on top to slow the drying process. Overnight the coffee was formed into “volcanoes” to protect it from moisture and minimise temperature fluctuations. The total drying time was 15 days.
