The story.
El Pedregal is a small, shade-grown coffee farm managed by Salomón Adriano Yunda, a dedicated member of the Páez community and the Comepcafe Cooperative.
With less than a hectare under coffee and a commitment to preserving native forest, Yunda’s approach blends tradition, sustainability, and innovation. The cool, high-altitude climate and mineral-rich volcanic soils yield dense, sweet cherries, while organic practices and careful handpicking ensure purity and clarity in every cup.



Process & quality.
- Selective Harvesting: Only the ripest cherries are picked by hand.
- Washing: Cherries are washed and fermented for 24–30 hours for clarity and complexity.
- Drying: Beans are dried in parabolic tents for slow, even development and stability.
- Quality Focus: Improved fermentation tanks, pest recognition tours, and best-practice crop management ensure every lot meets the highest standards.
